Roasted Vegetables

Ingredients

1 cup zucchini, sliced into rounds or half rounds

1 cup yellow squash, sliced into rounds or half rounds

1 cup broccoli medium florets

1 cup asparagus, cut into 1 inch segments

1 cup cauliflower medium florets

1/2 cup The Prairie Gypsies' Parmesan Gypsy (shake well before measuring)


Preparation

Combine all ingredients in a bowl, tossing until the vegetables are coated. Pour vegetables onto a baking sheet. Roast in a 400 degree oven until just tender, approximately 10-15 minutes. Place on a serving platter. Serve hot or at room temperature.
