Strawberry Lavender Pork Tenderloin

Ingredients

  • 1 1-lb pork tenderloin

  • Salt and pepper to taste

  • 2 t. Dijon mustard (or, try our Tarragon Mustard!)

  • 2 T. butter

  • 1/2 small red onion, minced

  • 1 c. chicken broth

  • 1/2 c. Prairie Gypsies' Strawberry Lavender Jam


Preparation

Preheat oven to 350°. Lightly coat a small roasting pan with cooking spray. Season tenderloin with salt and pepper and spread with mustard. Place in pan and roast for about 30 minutes or until internal temperature reaches 145°. Remove tenderloin from pan and allow to rest.

Place pan on top of stove over medium heat. Add the butter and red onion, cook until onion is tender. Reduce heat, add broth and jam, stir until jam is blended and sauce is somewhat thickened.

Slice pork into medallions and top with sauce. Serve over rice.
