Marinated Tomato Caper Salad

Ingredients

2 c. chopped Roma tomatoes

1 T. capers, drained

1 T. red onion, chopped

6 fresh basil leaves or 1 t. dried

1/2 c. The Parmesan Gypsy vinaigrette

1 1/2 c. fresh spinach or mixed greens

1/2 c. feta cheese, crumbled


Preparation

Combine tomatoes, capers, onion, basil and vinaigrette. Chill and marinate at least one hour. Serve over spinach and top with feta cheese.
