"Whole Lotta Love" Fajitas
(serves 8-12)


Marinade

  • 2 cloves garlic, minced

  • 1/4 c. lime juice

  • 1 bunch fresh cilantro, chopped

  • 1/2 t. cumin

  • 1/4 c. olive oil

  • 1/2 c. Prairie Gypsies Red Hot Lover Pepper Jam

  • 1/2 c. tequila


  • 2- 3 lbs. flank steak


Preparation

Combine all marinade ingredients and pour over flank steak. Cover and refrigerate. Marinate 8 hours to overnight. Remove steak from marinade and grill over medium hot grill on both sides until the desired doneness. Slice into thin strips. Simmer reserved marinade on the stovetop for 10 minutes until thickened. Drizzle over strips of steak. Serve with tortillas and your favorite fajita sides.
