Grilled Apricot Salmon
(serves 4 as main course)


Ingredients

  • 1 lb. salmon fillet or steak

       Marinade:

  • 4 cloves garlic, crushed and peeled

  • 1/2 cup dried apricot halves

  • 2 T. The Prairie Gypsies’ Apricot Mustard

  • 1/4 c. diced green onion

  • 1 T. black peppercorns, crushed

  • 2 T. balsamic vinegar

  • 1 t. dried thyme, or 1 T. fresh thyme

  • 1 c. olive oil


Preparation

Place the salmon in a glass baking dish with sides. Rub salmon with garlic cloves (leave cloves just placed on top of fillet). Combine other ingredients, mix well, and pour over fish. Marinate in the refrigerator for at least two hours or as long as overnight. Drain marinade and discard. Grill salmon about 3-4 minutes on each side until fish is firm and flaky. (This recipe is excellent for cedar plank grilling).
