(delightful vegetarian dish of black beans, tomatoes, rice, onion, garlic, bell pepper wrapped in a flavored tortilla...great for a warm day!)

(roasted poblano peppers simmered with potatoes, Southwest spices, milk and cream cheese)

Entree: Salmon Patties
(salmon with bread crumbs, onion, egg, cayenne, salt, pepper...served with green beans)

(ham, white beans, onion, garlic, bay leaves and fresh rosemary simmered with Parmesan rind...filling and hearty!)
