Monday:

Entree: Green Chili Chicken Enchilada Casserole
(corn tortillas, chicken breast, green chilies, onion, jack cheese and sour cream sauce)

Soup: Tomato Poblano (v)
(this one is creamy and delicious...just a bit of a kick with fresh roasted poblano peppers, tomatoes, onion, leek, a dab of sherry and cream)
Tuesday:

Entree: Tarragon Mustard Beef
Beef steak rubbed with pepper, roasted, sliced...topped with a sauce of mushrooms, green onions, beef stock, yogurt and The Prairie Gypsies Tarragon Mustard...served with mashed potatoes.

Soup: *Gypsies' Vegetable (v)
(the ingredients are up to the Gypsies' and always include fresh in-season veggies and a homemade veggie stock)
Wednesday:

Entree: Corned Beef and Cabbage
Yes, the Gypsies are Irish, so give us a big kiss! We make the best corned beef and cabbage seasoned to perfection.

Soup: Gypsies' Creamy Potato
(fresh potatoes, celery, onion, vegetable broth, milk and cream with seasonings...hearty!)
Thursday:

Entree: Chicken Spirals with Spinach and Mozzarella
Boneless, skinless chicken breast pounded thin, stuffed with fresh spinach and mozzarella, rolled, baked in marinara...served sliced over pasta.

Soup: Chicken Olive
(chunked chicken, green & black olive, onion, peas, carrot, cream)
Friday:

Entree: Meat Lovers Pizza Casserole
(a lasagna-like casserole loaded with pepperoni, meatballs, pasta sauce, onion, ricotta and mozzarella cheeses)

Soup: Hungarian Mushroom (v)
(creamy soup with loads of fresh mushrooms, onion, dill, paprika)
Saturday:

Entree: *Pasta Primavera (v)
(celebrate spring! fresh broccoli, asparagus, mushroom, onion over angel hair pasta with a light sauce of olive oil and garlic)

Soup: No Soup-It's Saturday
So Sorry! There is no soup on Saturday's menu. Look for delicious soups in our freezer.
